Tonight we tried our first recipe in our “Recipes for Picky Eaters” blog experiment. Shannan had sent me a recipe for Crockpot Chicken Cordon Bleu. Now to be honest I new son #2 wasn’t going to like it-he hates chicken and cheese together. The rest of us like chicken cordon bleu so I looked forward to making this meal. I did make 3 variations to the recipe to one to make it more cost effective, one because it just made more sense to me and one because I know what my kids won’t eat. Here is the recipe.
Ingredients:
- 3 boneless chicken breasts, pounded flat
- 3 slices Swiss cheese
- 3 slices provolone cheese
- 6 thin slices of ham, practically shaved
- 2 Tbs butter
- 2 cans cream of mushroom soup
- 1 soup can of milk
- salt, pepper, onion powder and garlic powder to taste
Lay out the flattened chicken breasts and take one slice of Swiss cheese, folded in half and lay over the largest end of the chicken breast. Pile on 2 slices of ham, then follow with the provolone cheese (also folded in half). Roll the chicken breasts up, then secure with toothpicks.
Melt the butter in a frying pan on medium-high heat and brown the outside of the chicken. Place the chicken in the crockpot, then pour the 2 cans of soup and the can of milk over top of the chicken. Add the spices then place the lid on the crockpot. Cook for 2 hours on high and then 3 hours on low. Serve over white rice.
First what I changed-I used cream of chicken soup instead of cream of mushroom. I also browned the chicken before rolling with the cheese and ham. The third thing I changed was, I used all provolone cheese.
Now for the results…Hubby and I both thought is was ok, kind of bland but not bad. DS #1 LOVED it. He cleared his plate, quickly and said we could make this more often. DS#2 tried hard to psych himself up as I was serving it. It was funny to watch, I thought he was going to throw-up before his plate was on the table. He asked how much he had to eat. I told him all of the chicken but not all the noodles (I served over egg noodles instead of white rice). He ate all the chicken and said it was “edible”.
Oh, one funny note…I had colored toothpicks. I used them to hold the chicken/ham/cheese together. The color came off and I had red and green stripes through my food! Buy plain toothpicks. I appreciate the recipe and I hope you will send more.
